Video: Vanilla raspberry cookies with cacao nibs


These are the most requested cookies by my family and they are also one of my favorite treats. While they are healthier than most cookies they taste like heaven. 
Vanilla, raspberries and cacao nibs are the perfect trio I can never get enough of.




RECIPE 
for 9 Cookies

Ingredients 
1 cup rolled oats
1 cup flour (I´m using whole spelt flour)
1/2 cup apple puree, unsweetened 
1/4 tsp bicarbonate of soda
1/3 cup agave sirup
2 tbsp maple sirup
6 El oil
2-3 El cacao nibs
1/2 cup frozen raspberries
1/2 tsp vanilla powder

Method
1. Pre-heat the oven to 170°C.

2. Mix oats, flour, apple puree, bicarbonate of soda, agave and maple sirup and vanilla powder in a big bowl.

3. Add cacao nibs and raspberries and stir them in gently. 


4. Using an ice cream scoop or two teaspoons place 9 half balls on a lined baking tray, leaving enough space between the cookies. Use a spatula to press the dough down until the cookies are 1,5cm thick.


5. Bake the cookies for 18-22 minutes until they are golden brown. 


They are best when they are still slightly warm. They will keep fresh in an air tight container for about 2-3 days.
