Use the left over coconut after draining for your next smoothie, porridge or musli. Nothing needs to go to waste :)
In the video I am using half-cup mugs. I have adapted the recipe to regular coffee mugs of 250ml.
RECIPE
for ca. 700ml coconut milk
Ingredients
1/2 cup desiccated coconut
1/2 +2 cups of water
Method
1. Place the desiccated coconut in a bowl and cover it with 1 cup of water. This has to soak for about 4 hours or over night.
2. After the soaking time put the coconut into a high speed blender or a high mixing bowl if you are using a hand-held blender, like I do, and add 2 cups of water.
3. Now it´s
only a matter of blending this until it´s smooth. When it looks just right blend for another minute.
4. Strain the milk through a nut milk or cheese cloth and squeeze.
5. Fill the milk into a sterilized bottle and keep it in the fridge.
