These breakfast muffins are my savior whenever mornings are super busy - and when are they not when you have a little, hungry toddler demanding his breakfast as soon as he opens his eyes in the morning :D
I usually bake a huge batch and freeze half of them. That way I am sure I have something delicious and healthy at hand whenever I need it.
RECIPE
for 12 muffins
Ingridients
2 cups oats
1/2 cup ground almonds
1 tsp baking powder
1 pinch salt
1 cup plant based milk (rice, oat or almond milk are perfect, but use any milk you like)
1/2 cup apple purred (unsweetened)
3 tbsp maple sirup (or honey)
1 tpbs oil
1/4 tsp cinnamon
4-5 plums
Method
1. Preheat the oven to 190°C.
2. Mix all dry ingredients in a bowl with a wooden spoon. 3. Add all the wet ingredients and stir them in gently until you have a smooth dough. 4. Dice the plums into 5x5mm cubes and fold them gently into the dough. 5. Place paper muffin cases in your muffin tray OR place silicon muffin cases on a baking tray. 6. Using an ice cream scoop or two teaspoons divide the dough evenly into the muffin tins.
7. Bake the muffins for 20-25 until they are golden brown on top.
They are best when they are still slightly warm.
In the morning put them in the oven for about 5-10min at 100°C or enjoy these beautiful muffins on the go. They are perfectly portable!

Making your own lip balm couldn´t be easier. It takes only a few minutes and only 4 nourishing ingredients to make the best lip balm no shop bought one will equal. At the same time you will safe a lot of money, because this lip balm costs you only a few cents.
Particularly the neutral lip balm is also a beautiful soothing balm for rough patches on your skin like your elbows or knees. I even use it as a hand cream before I go to sleep.
The lip balm with lime and mint can also be used as a refreshing foot balm.

These are the most requested cookies by my family and they are also one of my favorite treats. While they are healthier than most cookies they taste like heaven. Vanilla, raspberries and cacao nibs are the perfect trio I can never get enough of.
In today´s video I show you the recipe for my lush Peach-Melba-Smoothie. It´s inspired by the famous ice cream cup and combines some of my favorite flavors: peaches, raspberries and vanilla. A fabulous breakfast you could also enjoy as a dessert.
I love pizza! I have loved pizza for almost all my life. I love it so much that we have pizza almost every Friday. It would be boring, though, if I always made the same one so I like to mix things up a little and experiment with different toppings as well as different crusts. This one is one of my favorite. Instead of the bread crust I use polenta. It´s much easier and quicker to make, healthier and tastes amazing. Put on top of your pizza whatever you fancy. I love the combination of courgette (zucchini) and sundried tomatoes which add extra flavor. You can find the recipe for my polenta pizza here below the video.
This is my favorite smoothie! Unbelievable that such an amazingly tasting green smoothie can be so healthy. You can enjoy it any time of the day. If you wish you can even sneak in a shot of your favorite rum. I won´t tell anyone ;)
RECIPE for 1 big glass Ingredients 1 hand full of fresh spinach (or frozen) 2 1cm slices pineapple 1/2 banana 150-200ml coconut milk Method Put all ingredients in a high speed blender or use a hand held blender and blend until smooth. Find out how you can make your own homemade coconut milk HERE.

It´s really easy to make coconut milk in your own kitchen. It saves a lot of money and produces much less rubbish. Use the left over coconut after draining for your next smoothie, porridge or musli. Nothing needs to go to waste :) In the video I am using half-cup mugs. I have adapted the recipe to regular coffee mugs of 250ml.
RECIPE for ca. 700ml coconut milk Ingredients 1/2 cup desiccated coconut 1/2 +2 cups of water Method 1. Place
the desiccated coconut in a bowl and cover it with 1 cup of water.
This has to soak for about 4 hours or over night.
2. After the soaking time put the coconut into a high speed blender or a high mixing bowl if you are using a hand-held blender, like I do, and add 2 cups of water.
3. Now it´s
only a matter of blending this until it´s smooth. When it looks just right blend for another minute.
4. Strain the milk through a nut milk or cheese cloth and squeeze.
5. Fill the milk into a sterilized bottle and keep it in the fridge.

This quick and easy salad is a true winner when it comes to satisfying your hungry stomach on a hot day. It´s brilliant as a side or even a main dish served with some fresh bread. The dressing is just amazing. Fresh apples, lemon, a drizzle of sunflower oil. Perfect with the creamy avocado and the crunchy pumpkin seeds. I can´t get enough of it. Finally, the craze over cold brew coffee has swapped over to Vienna. When I first tried it I was naturally skeptical. However, the smooth and round taste has converted me and since I know how easy it is to put it together at home, I have made it many, many times.

Kaiserschmarrn is a traditional Austrian sweet dish. It is served warm with either apple sauce or stewed plums (Zwetschkenröster). It is an ideal store cupboard meal that can be scrambled together and eaten any time of the day. In restaurants they usually put it in the dessert section of their menu. When I grew up we would get it for lunch as the main dish, though. Since it is really easy to make and very loved by everyone in my family, this was one of the first recipes I experimented with in order to make a healthier version also my sunshine could enjoy. When I first shared this recipe on my German blog it was late summer. I was inspired by the variety of ripe fruit available at the time. Plums are currently not in season and I really prefer to buy seasonal fruit and vegetables, so I just adapt the recipe and use whatever fruit is available. This Kaiserschmarrn is also great with apples, different berries, peaches, apricots or cherries. You can even replace it with raisins (which is actually the traditional addition) or other dried fruit. Try whichever fruit you fancy and let me know about your variation!
To make my own chocolate has become a bit of a passion. I love trying out new recipes, experiment with them and try different variations. These energyballs are in every way amazing! They are packed with nutritious ingredients and taste like my beloved Ferrero Rocher. They contain no refined sugar. The sweetness comes from dates and raisins which are mixed with oats, roasted hazelnuts and cacao or cocoa. A devine indulgence that is healthy at the same time. A perfect snack when you´re on-the-go, or outside with your kids and they need a bit of energy or just to treat yourself when you´re craving for chocolate.
Speaking of kids. My little sunshine loves to help me make them. It´s a great activity for rainy afternoons and I believe that children can only benefit from involving them in the kitchen.
